If you’re a vegetarian then you know that most sub or sandwich places leave you extremely limited. You usually get to choose from their vegetables that come standard on their other carnivorous sandwiches and to me that’s just plain boring! It’s boring enough for me to start a journey to making the best… most delicious vegetarian sandwiches prompting my #SandwichSunday for #SundaySupper movement.
Today I decided to go big… kinda. My sandwich shall be called the “Shaved Portobello and Asiago”
- portobello mushroom
- sweet pepper
- sea salt
- fresh basil leaves
- baby spring mix
- extra virgin olive oil
- asiago cheese
- ciabatta roll
I started with one large portobello mushroom cap (cleaned) and shaved thin pieces off. I then thinly sliced a few onion pieces and sweet peppers. I lightly coated a pan with olive oil and placed the mushrooms, onion and peppers on a medium heat with some coarse sea salt to get a little bit of color to them. While they were cooking I thinly sliced some fresh Asiago cheese and chopped the remaining pieces of mushroom into extremely small pieces, added olive oil and a Sicilian blend of spices to make a paste.
Building the sandwich
From bottom to top: mushroom paste, fresh basil leaves, mushroom, onions and peppers, asiago cheese, baby spring mix and a drizzle of extra virgin olive oil all on a fresh ciabatta roll from Publix.
I give this sandwich a 3 out of 5.
It was tasty, but I should have added some fresh garlic and a little more basil.
